There are meals that are simply food, and there are meals that are arguments. The Onam Sadya is emphatically the latter: an argument about abundance, about the relationship between a harvest and the people who depend on it, about what a community owes itself in the moment of celebration, and about what the banana leaf, that most democratic and most dignified of all serving surfaces, can hold when the kitchen behind it has been paying attention.

Twenty-six dishes, sometimes more, arranged on the leaf in an order that has been established by tradition and refined by generations of cooks who understood that the sequence of what arrives on the leaf is as considered as the content of each dish. The rice at the centre. The parippu and ghee at the beginning. The avial, the olan, the erissery, the thoran, the inji puli, the pachadi, the kichadi, the pulissery, the sambar, the rasam, and the payasam, not one but two, because the meal that built its case across twenty-four savoury courses deserves more than a single note of sweetness at its close.

The Sadya is not a meal you consume. It is a meal you participate in. And in 2026, the places doing it most seriously, from Kerala’s most revered kitchens to the hotel dining rooms across India that have earned the right to serve it, are doing it with a quality of attention that makes the participation worthwhile.

This Onam, OMO Gurgaon invites Delhi-NCR back to that moment, hosting its annual Sadya on 29th and 30th August, across two sittings at 11 am and 1 pm, continuing a tradition the restaurant has now marked for  since 2024.

At its heart, OMO’s Sadya is an exercise in restraint. In a restaurant built around reinvention, the Sadya is deliberately left alone, its structure, sequence, and roster of iconic dishes are preserved exactly as generations have known them. What changes, instead, is where a handful of ingredients come from. A fiddlehead fern foraged in the monsoon, a queen pineapple carried in from Manipur, or a plum from the orchards of Kashmir finding its way into the payasam small, considered additions that let OMO’s ingredient-led philosophy speak without ever raising its voice.

What the Sadya Is Really About

The Onam Sadya is sometimes described as a feast of abundance, and it is that, but the description does not quite capture what makes it distinct from other elaborate Indian meals. The abundance of the Sadya is not about excess. It is about generosity: the generosity of a tradition that says every person who sits at the leaf deserves the same complete experience regardless of who they are, and that the meal which marks the harvest should be as complete as the harvest itself.

The banana leaf is the equaliser. Served on it, the Sadya does not distinguish between the guest at one end of the hall and the guest at the other. The leaf is the same, the sequence is the same, the payasam is the same. What varies is only the attention of the kitchen and the appreciation of the person eating.

In 2026, the kitchens worth seeking out are the ones that have understood this. The Sadya they produce is not a restaurant meal dressed in festival clothing. It is the argument that the tradition has always been making: that abundance, properly expressed, is one of the more generous things a culture can offer to the people who belong to it.

The leaf is waiting. The payasam will be ready.
